Located in a premier tourist corridor of Puerto Rico, this venture was designed to disrupt the traditional bakery model by capturing the "After-Hours" market and introducing the American-style cookie to the Puerto Rican culinary scene. The objective was to create a dual-revenue stream: a premium daytime destination geared towards families and tourists that transitioned into a sophisticated evening experience where high-end spirits meet artisan cookies.

Challenge

The client sought to launch a "Spirit & Cookie" pairing program, headlined by a signature Edible Cookie Shot. This presented a major technical hurdle: engineering a cookie dough structural enough to be baked into a vessel shape, yet soft enough to eat, while creating a flawless hydrophobic barrier (using milk chocolate) to prevent liquid seepage. Furthermore, the launch was scheduled for the San Sebastian Festival—the island's highest-volume period—requiring a zero-failure operational system from day one.
