These visionary entrepreneurs launched a gourmet artisan donut shop in the highly competitive Miami food scene. A high-profile gourmet donut brand in Miami’s competitive "destination" dessert market. Known for its avant-garde flavor profiles, the brand had established a significant local and national media presence.

Challenge

The client faced a tremendous difficulty with the sudden loss of their Pastry Chef and recipes. I partnered with another consultant to undertake the management and guidance of the BOH team, and the covert re-development of their signature items pairing super fresh, high quality ingredients with elevated and unique presentations; introduced new additions to maintain their current marketing momentum and quality that their consumer base had become accustomed to, with a little more edge and flair. PPD managed the team and developed over 70 distinct, out-of-the-box flavor profiles that were both delicious and operationally scalable- some of which became top selling, brand building items that are on the menu to this day- while keeping the operation running and transitioning the team seamlessly to their next pastry chef.
