The client’s vision centered on a modern French pastry collection informed by classical technique and elevated through the integration of traditional East Asian ingredients. The primary challenge was the creation of a proprietary 'Fusion Scientific' framework—ensuring the delicate chemical balance of classic French pâtisserie remained stable when introduced to the high-moisture and varied textures of authentic East Asian botanical and grain-based ingredients. Achieving this required a nuanced approach—balancing delicate sponge work, refined mousse compositions, and precise gelées with flavors such as ube, black sesame, pandan, and yuzu, ensuring neither tradition overshadowed the other.
